A traditional recipe of Cyclades - Greece.
- sun-dried tomatoes (chopped)
- onion (chopped)
- active dry yeast
- warm water
- salt & pepper
- olive oil for frying
Leave the tomatoes in a bowl with some cold water for a few hours so that the water will draw the salt out of them.
Place them on a paper towel, squeeze them gently to release the water and chop them.
Chop the onion as well.
Mix the yeast with the water until it is completely dissolved and add it into the bowl with the sifted flour.
Then add the mint, the onion, salt and pepper and as much water as is needed until the mixture is firm enough to make into balls.
Leave it to rise for about 1 hour.
Preheat the oil in the pan and fry the dough.
