The recipe of traditional ladenia of Kimolos.


  • 700gr flour
  • warm water
  • 5gr yeast
  • 3 fresh tomatoes
  • 2 onions
  • salt & pepper
  • olive oil


Sift the flour into a bowl. Dissolve the yeast and add it to the flour. Add a pinch of salt and then add the water little by little until the dough is pliable and no longer sticks to your hands. Allow the dough to rise for about 1 hour in the bowl. Meanwhile, cut the tomatoes and onions into slices. Spread some olive oil on your baking tray. Roll out your pizza dough to the size of the tray, and then place it on the tray. Spread some olive oil on the dough, add the sliced tomatoes and onions and then salt and pepper. Set aside in a warm spot to rise again and bake at 180ºC for 50 minutes until the ladenia has just browned.
